Penne Pasta, 1 T olive oil, 1 medium onion chopped, 1 medium carrot chopped, 1 can diced tomatoes with basil, garlic, and oregano (undrained), 1 zucchini chopped, some fresh parsley chopped, and shredded Parmesan cheese
Cook and drain pasta. While pasta is cooking, heat oil in skillet and cook onions and carrots 2-3 minutes, until tender. Stir in tomatoes. Cook about 5 minutes. Stir in zucchini, then add parsley. Serve over pasta with as much Parmesan cheese as your heart desires.
